Where today you are welcomed by the refined elegance of Il Salotto del Colosseo, there
once stood a grocer’s shop run by Ilaria Valeriani’s father. It was a place imbued with the
simple, genuine aromas of the past, and where the quality of the products on offer and
human connection were core ingredients of daily life.
Right next door, there was a lively café, run by Alessandro’s family – Alessandro, who
would later become Ilaria’s husband. Over coffees and during chats about the
neighbourhood, the young Ilaria and Alessandro gradually got to know each other,
weaving the first threads of a bond that time would render unbreakable.
As fate would have it, Alessandro’s parents eventually took over the grocer’s shop, and
transformed it into a restaurant that retained the authentic spirit of its origins, while
opening itself up to new culinary ideas. Years later, Ilaria and Alessandro, who had now
chosen to share a life together, decided to take up their parents' legacy. With passion,
dedication, and a shared vision, they created Il Salotto del Colosseo – a place that
honours its roots while looking ahead to a future of refined gastronomy and sincere
hospitality.
